Healthy Recipe: Greens and Apple Salad

As you probably have already noticed I love salads. They are fresh, healthy, full of vitamins and easy to make. The recipe I bring here today is very, very easy to prepare and it’s delicious.

Greens and Apple Salad

Original kaboose.com recipe, developed by Wendy Kalen

Ingredients

  • 6 ounces pecans, coarsely chopped
  • 1½ pounds mixed greens
  • 3 Gala apples, coarsely chopped
  • 1 red onion, coarsely chopped

Cooking Instructions

  1. Heat oven to 350 degrees F. Toast pecans on baking sheet 5 minutes, or until fragrant and lightly toasted.
  2. In large serving bowl combine greens, pecans, apples and red onion. Toss to combine.

Substitution(s)

  • Almonds, walnuts or your favorite nut can be substituted for the pecans
  • Any apple may be used in place of Galas. Galas have a tendency not to brown like other apples. If you use a different apple, you may want to toss them in a little acid such as lemon or orange juice to keep them from browning
  • White, yellow, or sweet onion may be used in place of the red onion

This is a green salad that can be served as an entrance, side dish or even a main dish. With such a fresh, low fat salad, who need nuphedra to lose weight?

The weather is getting worse and those that enjoy exercising outdoors are in big trouble because the weather doesn’t offer good conditions and you might get a cold or another worse disease if you dare going outside and practice.

If you are following a weight loss program you shouldn’t stop exercising and

you should continue to follow the established program, if you can’t do it outdoors you do it indoors.

So, what do you need to exercise indoors? You have to look for exercise equipment. Don’t think that you are wasting money when you can have good weather in a few weeks. Imagine those summer days when you want to exercise and it’s too hot outside…you can use your exercise equipment you have inside your fresh house.

Which exercise equipment should you look for? Here are a few examples of the most popular equipments:

Treadmill:
There are different styles of treadmills and prices vary a lot so you have a good range of choice. Some are electric others powered by your walking. I’m sure you can find the right one for you at an affordable price.

Elliptical machine:
Ellipticals are very versatile and usually they combine different types of exercises. Advanced models even let you workout your lower and upper body.

Exercise bike: In my opinion this is the most common exercise equipment we find in our friends houses. There are a lot of models and styles than combine upper and lower body workout. Prices vary a lot depending on what the exercise bike offers to the person that will be using it.

Trampoline:
This is an optional exercise equipment that can used by all family member and depending on the size of the trampoline you can use it indoors or outdoors. Usually they are really affordable and you can have a good time playing with it while you exercise.

If you are looking for cheaper products you can always try other products used for Yoga and Pilate. You can also try resistance bands, exercise balls, weights and other small items that can be useful for your weight loss program or just to keep in shape.

I hope you enjoy your exercise plan indoors, just stay away from outdoors and from the bad weather.

Light Recipe: Low Fat Shrimp Pasta Salad

Celebrations are over and now it’s time to solve some of the eating mistakes we’ve done this last two weeks. Put high caloric and greasy food away and start eating healthier again.

Today I bring here a healthy low fat salad. This salad can be used as a main dish, in a picnic or as a light supper. I hope you enjoy it!!

LOW FAT SHRIMP PASTA SALAD

Ingredients:

* 6-ounces rotini pasta
* 1 cup frozen peas
* 6 ounces green beans, cut into pieces
* 2 vine-ripe tomatoes, halved vertically, then thinly sliced
* 3/4 pound cooked shrimp

Dressing
* 1/4 cup fat-free mayonnaise
* 1/4 cup plain low fat yogurt
* 1 tbsp nonfat milk
* 1 tsp dried mixed herbs
* Freshly ground black pepper

Preparation:
Cook pasta according to package instructions. Add peas to pasta water after two minutes of cooking time. Drain and cool pasta and peas. Cook green beans for 5 minutes in a pot of boiling water. Drain, then plunge into a bowl of iced water to retain color and stop cooking process. Drain again.

Assemble salad in a large bowl. Make creamy low-fat dressing by combining mayonnaise, yogurt, herbs and black pepper. Pour over salad and toss well. Add another tablespoon of nonfat milk if you prefer a thinner dressing.

Here I am with one more Light Recipe. This time I bring here a dessert (I love desserts), but don’t worry, this is a low fat dessert. All the ingredients are low fat and low sugar so don’t worry about ruin your diet.

Low Fat Fudge Brownies

Cook Time: 25 minutes
Ingredients:

* 1/2 cup all-purpose flour
* 1/2 cup whole wheat flour
* 1 cup firmly packed light brown sugar
* 3/4 cup cocoa powder
* 1/2 tsp baking powder
* 1/4 tsp salt
* 1 egg or 2 egg whites
* 1 tsp vanilla extract
* 1/4 cup unsweetened applesauce or prune puree
* 1/4 cup reduced-fat sour cream
* 1/4 cup fat-free milk

Preparation:

Preheat oven to 350 degrees. Coat an 8-inch square baking pan with nonfat cooking spray.

In a medium bowl, stir together flour, sugar, cocoa, baking powder and salt.

In a large bowl, lightly beat egg if using, or place egg whites in bowl. Add vanilla, applesauce, sour cream and milk. Whisk until well blended. Add dry ingredients and mix until just moist.

Empty batter into pan and bake for 25-30 minutes. The center should still be slightly soft. Cool in pan for a few minutes and continue to cool on a wire rack.

Makes 16 brownies.

Per Serving: Calories 111, Calories from Fat 13, Total Fat 1.5g (sat 0.7g), Cholesterol 14mg, Sodium 66mg, Carbohydrate 22.1g, Fiber 1.9g, Protein 2.3g

The Holiday season is just around the corner and if you are working on losing some weight it can be a difficult season. Usually Christmas and New Years celebrations mean meals with high caloric and high in fat foods and low in nutrition. To help you there are five tips you can follow to accomplish your weight loss plan:

  • First Tip: Avoid the alcohol. Usually parties have a lot of cocktails and beer but they are full of calories. Having one drink is fine per party is the right amount.
  • Second Tip: Show up a little late at parties so that you don’t eat the entire meal available. Take a little healthy snack or meal at home so that you don’t feel tempted to eat a lot.
  • Third Tip: Enjoy the holiday to do some outdoor activities. Play in the snow, walk along the coast, do as much activity as you can to burn calories. It’s good for your heart and keeps you away from the cakes and high caloric food.
  • Fourth Tip: Go to the mall, walk around the shops, don’t take the escalator and instead use the stairs. At parties keep moving around talking to several guests without knowing you are exercising and burning calories.
  • Fifth Tip: Well, you never know what people is going to offer you but for sure one or two will be offering you gifts of food. Boxes of chocolates and cookies are a temptation. So share them with your family, friends and co-workers.

I hope these tips help you stay on your weight loss program during the holiday season even if you are surrounded by goodies.
