Light Recipe: Light Coconut Pie

It’s time for another Light Recipe.

This time I bring here a Bitsy’s Kitchen recipe: Light Coconut Pie. This recipe brings together cream cheese, pina colada and flaked coconut.

Ingredients:
9-inch prepared graham cracker crust
8 oz. light cream cheese, softened
8 oz. low fat pina colada
or coconut flavored yogurt 2 Tbsp. white sugar
1 1/2 cups sweetened flaked coconut
8 oz. frozen dessert topping, thawed

Method:
Beat together cream cheese and sugar. Mix in yogurt and coconut. Gently fold in topping. Spoon into crust, cover, and chill in refrigerator for at least 3 hours.

This recipe makes 8 servings.

  2. It doesn’t matter if the pie is sweet or salty, I absolutely can survive by eating only pies. My ideal day consists of getting up in the morning and having a piece of pecan pie with coffee for breakfast. Then having a piece of tyropita the Greek cheese pie for lunch and just keep “pieing” it up all day long.
